Laura is our wonderful Sommelier at Fish Shop. She supported us in our wine list curation and staff training when we opened before joining us full-time over a year ago.
”Fish Shop is a very special place for a sommelier. There is always something new on the menu and our food is packed with flavour, so any wines we serve need to be not only tasty, but able to complement and highlight our dishes.”
Is wine pairing with fish and seafood limiting, or is there a whole host of options guests can try?
‘There are a lot of countries and islands that grow grapes right by their coastlines, such as Sardinia, Corsica, Greece and Spain. The people here don’t limit themselves to simply serving white wine with seafood, and at the Fish Shop, neither do we. Our menu changes often, so we get to play around with a lot of different wines – savoury, or bone-dry, or buttery whites, alongside bright and spicy reds. And rosés? Yes please!’
Why do we only serve British & European wines?
‘Sustainability is at the heart of everything we do at Fish Shop. So, while there are many wonderful wines made around the world, we’ve realised that that we can find everything we need closer to home and means we can serve wines that people might not have access to all the time.
Some great examples of this are guest favourites Malvasia Istriana from Slovenia and White Merlot from Switzerland. And we’ve recently been serving a very tasty dry Furmint from Tokaj in Hungary.
But it’s not all about sustainability! We serve these wines because we think they are delicious. And the quality of British wines, for example, has been going from strength to strength, with some very premium wines being produced.’
We’re about to launch the Fish Shop Wine Box, can you tell us more and what guests can find in each box?
‘We have a lot of guests asking where they could buy some of the wines on our list so we decided to launch a quarterly Wine Box for our guests to take home and try our selections in the comfort of their own home.
We’ll be serving the same style as we do at the restaurant. Hopefully, something interesting and delicious and maybe through it, someone can find a new favourite wine. A mixture of whites, reds, and rosés, and for the larger boxes, a cheeky bottle of bubbles or two. For the holidays, a sweet or fortified wine is always a good call.
