In celebration of National Oyster Day, we wanted to spotlight our incredible oyster supplier Cape Wrath Oysters, run by Patrick & Lucy Blow.
Situated on the northwest coastline of Scotland, at Kyle of Durness, the site has everything that oysters require to flourish – good water quality, strong currents and an abundance of fresh algae. Using traditional techniques they currently produce 150,000+ oysters per year, supplying restaurants like us or home delivery.
Oysters can filter up to 50 gallons of water a day, and are known as ‘ecosystem engineers’, playing a vital role in the health of marine ecosystems and fostering biodiversity. They are also a zero-input crop because they don’t require anything, feeding on naturally available plankton in the water.
